I love it when I find a recipe that is fast and easy, yummy, requires only a few ingredients, is healthy, and still tastes good as leftovers the next day. This one really nails it! It might be 75 degrees outside, but it's the fall dammit, so I'm cookin' soups and wearing a scarf.

I served mine with some crusty olive bread and it was delicious. I didn't want it to be too healthy. It's always nice to add a little extra padding before winter, right?
